The wastes generated by the shrimp industry are approximately between 50 and 60% of catch volume. These residues such as head, viscera, shell potential pollutants if they not treated for proper disposal. One way to solve this problem is use functional food ingredients. In regard, rich in chitin, second most abundant biopolymer on planet after cellulose. Chitin composed N-acetyl glucosamine, a molecule used sweetener an aid treatment coronary diseases gonarthrosis. glucosamine can be obtained hydrolysis colloidal chitin using chemical or enzymatic methods; however, methods associated with pollution. study, we determined conditions obtaining extracellular enzymes produced marine bacterium isolated coastal zone Progreso, Yucatan, Mexico. best yield was 2.65%, 10 mg/mL at 60°C, pH 8.9 3.5% NaCl.
